Morrison Grill

The Morrison now offers two restaurant spaces for our guests to enjoy exciting culinary experiences created with the very best of our country’s produce, and delivered with the renowned warmth and relaxed friendliness of truly Irish hospitality.  

The freshly restyled Halo room, complete with its eye-catching Birdman sculpture, is open for full Irish buffet breakfasts each morning, and is also available for private group dinners. The Morrison Grill is our new all-day restaurant and dining area, featuring Dublin’s first Josper Grill. Its menus combine our dedication to Irish provenance with elements of rustic international cuisine and comforting, American-style dishes.

The Josper

The Josper Grill is an indoor barbecue oven and cooks a variety of meat and fish at over 500°C, sealing in all the flavor and moisture for an incredible taste experience.

Provenance - Place or source of Origin

From land to table is of utmost importance - John is commited to this - certifiable, home grown and reputable is all that matters. Our beef for The Josper is 100% certified Irish beef born, reared and bred all with the ‘Feirme Nadurtha’ stamp. There is one exception - our Rib eye - still guaranteed Irish, this comes from Kettle Meats at 38 days dry aged - simply too good to not have on our menu. Our fish has to be BIM approved and thru our strong relationship with Iona farms in County Dublin we have established a growing schedule which will see seasonality to the fore on our menus. After that, it’s all put together daily by our team of Chefs in house.


For John it began in Kerry - being given the opportunity to work in a professional kitchen was the starting point before Dublin beckoned to complete his studies at Cathal Brugha - 10 years on you could say he is Dublin savvy,  up on the dining scene and aware of what is new and next.

John has worked in the best of both - hotels and restaurants - a Chef for all seasons who can understand the demands of a hotel while cooking simultaneously for a fabulous destination restaurant. He loves hearty, earthy Irish dishes - they form the base for his dishes along with imagination and fun.

Great kitchens can make great Chefs - and vice versa - we think we have both here. John’s food? ‘Refined rustic’ - simple dishes, elegant and homemade - sounds easy but often simplicity is the thing hardest found!


Our Menu

Our extensive à la carte menu presents the best local produce with touches of comforting, American-style cooking, giving you the opportunity to taste the very best of Ireland in season.

The menu is democratic and down to earth in its content and delivery, with provenance and stories at the heart of the concept.
